Established by the Gregory family in 1996, the region's rich grey soil over limestone provides ideal conditions for grape cultivation. The taste profile of Barley Stacks Wines is significantly influenced by the region's climate, which includes sea breezes and limestone sub-soils. These factors contribute to unique tasting notes such as plum, lingering liquorice, apricot, and passionfruit. The winery produces 25 different lines from four grape varieties and aims for an average annual production of 40 tonnes of grapes and between 2500–3000 cases of wine.
