Head Chef DALE SQUIRRELL is now cooking up a storm at THE STIRLING ARMS. Dale hails from Aberdeen, Scotland and brings with him a wealth of experience cooking at up-market hotels and country houses in Britain.

Chef Dale showed great potential from a very early age becoming Scotland’s runner up Junior Chef of the Year at only 16 years old. His life in the professional kitchen began at the COPTHORNE in London before moving onto the 5 star BABBINGTON HOUSE (Soho Group). He worked closely with renowned French Chef Michel Bras in his three Michelin star restaurant in Laguiole, France.

After six years climbing the ladder of his profession, Dale moved to the southern hemisphere in 2005 joining the staff of THE TASTING ROOM in Wellington and THE GRAND CHATEAU (Bayview Group) in Mount Ruapehu in New Zealand before being made Head Chef on Fraser Island in 2007.

Dale’s inspirations are the freshest seasonal raw ingredients and his particular passion is molecular gastronomy. Developing new recipes and seeing them through the whole process to implanting them into a balanced menu is his delight. Everything on his menu is made in-house, a compilation of gutsy, full-flavoured dishes that attest to his kitchen talents. Dale’s focus is on delivering a culinary experience that his guests won’t forget. Pure, simple, elegant, indulgent.
